I've checked on the official website and it appears that there is another version of ZoomText released. You should update to that version (11.5) to avoid any compatibility issues. As far as I know, this type of behavior is related to compatibility and it you have the chance, apply it using right click on executable file.
Go to Properties > Compatibility and choose an older version of Windows from the list. If it's not working this way, obtain a new version from its official website.

How can I have Zoomtext on two monitors? I have installed it but it displays only on one monitor.

After you installed Zoomtext, at first run, the software should have detected the presence of two monitors and asked you if you want to activate the Dual Monitor feature. If this didn't happen, you can enable it by selecting Type > Dual Monitor > Enable (or disable) from the Magnifier toolbar. If you want, you can press the Dual Monitor on/off hotkey: Windows + Shift+ D.
After enabling the feature you can select the view type by selecting the desired view from Type > Dual Monitor. You can also switch the dual monitor views by pressing
the Dual Monitor View hotkey: Windows + Shift+ Z.
